Smoky beans with haddock

 

Ingredients (serves 2)

  • 1 tblsp olive oil

  • 1 onion, chopped

  • 2 cloves garlic, chopped

  • 1 red pepper, chopped

  • 3-4 celery stalks, chopped

  • half a leek, trimmed and chopped

  • 1 tblsp tomato purée

  • 1 tsp smoked paprika

  • half tsp dried oregano

  • 1 tins chopped tomatoes

  • 1 tin butter beans, drained and rinsed

  • 100g feta, crumbled flat-leaf parsley chopped

  • 1 pack pitted olives

  • a big handful of fresh herbs - parsley or basil

  • 2 fillets undyed smoked haddock

Method

  1. Heat the oil in a large saucepan and gently cook the onion with the celery, leek and red pepper for 5minutes until the vegetables start to soften.

  2. Stir in the tomato purée, garlic and smoked paprika and cook for 1 minute, then add the oregano, tomatoes, olives and beans. Season and bring to a simmer.

  3. Gently simmer for 10-15 minutes until everything is cooked and softened.

  4. Meanwhile, heat a little oil in a non-stick frying pan and gently cook the haddock for 10-12minutes.

  5. Top with crumbled feta and chopped parsley and/or basil to serve.
