Apple, Spinach and Lentil Salad

Ingredients

• 3 big handfuls of spinach
• 1 can of green lentils
• 1 apple
• ½ red onion, peeled and finely sliced
• 2 sticks of celery, finely chopped
• A handful of walnuts (optional)
• 4 tblsp olive oil
• 2 tblsp apple cider vinegar
• 1 tsp honey
• 1 tsp Dijon mustard
• Salt and pepper

Method

1. Toast the walnuts in a dry pan lightly for a couple of minutes.

2. Combine the onion, celery and spinach in a bowl.

3. Quarter the apples and slice as thinly as you can before adding this to the salad too.

4. Drain and rinse the lentils, then add to the salad.

5. Mix the dressing ingredients together and toss through the vegetables.

6. Season, toss and serve.
