Pecan and maple granola
Ingredients
200g jumbo oats
100g pecans
100g pumpkin seeds
2tsp ground cinnamon
Pinch of sea salt
2 tblsp coconut oil, melted
2 tbslp maple syrup
Method
Preheat the oven to 160C.
Combine the oats, nuts, seeds, cinnamon and salt in a large mixing bowl.
Stir in the melted coconut and maple syrup.
Spread the mixture out on a large baking sheet and bake for about 20minutes until golden and crunchy.
Store in an airtight container.
Serve with natural or Greek yoghurt, a spoonful of milled flaxseed and top with berries.
