Pecan and maple granola

 

Ingredients

  • 200g jumbo oats

  • 100g pecans

  • 100g pumpkin seeds

  • 2tsp ground cinnamon

  • Pinch of sea salt

  • 2 tblsp coconut oil, melted

  • 2 tbslp maple syrup

Method

  1. Preheat the oven to 160C.

  2. Combine the oats, nuts, seeds, cinnamon and salt in a large mixing bowl.

  3. Stir in the melted coconut and maple syrup.

  4. Spread the mixture out on a large baking sheet and bake for about 20minutes until golden and crunchy.

  5. Store in an airtight container.

  6. Serve with natural or Greek yoghurt, a spoonful of milled flaxseed and top with berries.
