Spiced cherry protein porridge

 

Ingredients

Serves 2

For the cherry compote:

  • 150g frozen cherries

  • 1 small orange

  • 3 cardamom pods

For the porridge:

  • 70g jumbo oats

  • 2 dsp chia seeds

  • 2 heaped dsp milled flaxseed

  • half tsp ground cinnamon

  • a handful of walnuts

  • 200ml oat milk

  • 100ml water

  • ½ tsp ground cinnamon

  • ½ tsp ground ginger

  • A handful of hazelnuts (chopped)

Method

1. Zest the orange and put into a small saucepan with the cherries. Squeeze the juice of half the orange and add this too. Cook over a medium heat for about 8-10 minutes until the cherries are defrosted and the juice starts to become thick and syrupy.

2. Combine the oats, chia, flaxseed and spices in a small saucepan and top with water or milk. Cook until creamy – about 5 minutes.

3. Serve in your favourite breakfast bowl, topped with the cherry compote and chopped hazelnuts
