Quick spinach omelette

 

Ingredients

2 eggs

a big handful of spinach

25g cheddar, grated

Method

  1. Wilt the spinach in a non-stick frying pan pan over a gentle heat.

  2. Whisk the eggs in a small bowl. Season with salt and pepper.

  3. Take the spinach out of the pan and set aside.

  4. Pour the eggs into the pan and cook gently until they just start to set.

  5. Put the spinach in one half of the omelette and top with cheese.

  6. Fold in half and serve.
