Low carb cheese scones

 

Ingredients

Makes 6:

180g ground almonds 

1.5 tsp baking powder

2 eggs, whisked

25g butter, melted 

30g parmesan, grated 

Method

  1. Preheat your oven to 180C. 

  2. Whisk the eggs in a small bowl.

  3. Mix the almonds, baking powder and parmesan together in a bowl, make a well in the middle and pour in the eggs. Mix together.

  4. Add the melted butter and combine.

  5. Roll the mixture into loose balls and place on a baking tray. Press down to flatten slightly, without squishing them too much!

  6. Bake at 180C for 15 minutes, then reduce the temperature to 140C and bake for a further 5 minutes until golden brown and cooked through.
