Fruits of the forest yogurt bark

 

Ingredients

  • 400g full fat/Greek natural yogurt

  • 1 tblsp honey

  • 1 tblsp tahini

  • a handful of strawberries, sliced

  • a handful of blueberries

  • a handful of raspberries

  • a sprinkle of pumpkin seeds

  • a sprinkle of coconut flakes

Method

  1. Line a 20cm brownie tin with baking parchment paper.

  2. Combine the yoghurt with the honey & tahini and pour into the lined tray.

  3. Lay the strawberries onto the yoghurt base. Sprinkle the blueberries and raspberries around the strawberries.

  4. Add the seeds & coconut.

  5. Transfer to the freezer for an hour or two, or until firm.

  6. Lift from the tray using the parchment paper. Snap off sections, or cut into squares with a sharp knife.
