Fruits of the forest yogurt bark
Ingredients
400g full fat/Greek natural yogurt
1 tblsp honey
1 tblsp tahini
a handful of strawberries, sliced
a handful of blueberries
a handful of raspberries
a sprinkle of pumpkin seeds
a sprinkle of coconut flakes
Method
Line a 20cm brownie tin with baking parchment paper.
Combine the yoghurt with the honey & tahini and pour into the lined tray.
Lay the strawberries onto the yoghurt base. Sprinkle the blueberries and raspberries around the strawberries.
Add the seeds & coconut.
Transfer to the freezer for an hour or two, or until firm.
Lift from the tray using the parchment paper. Snap off sections, or cut into squares with a sharp knife.
