Date & coffee cookies

 

Ingredients

1 cup ground almonds

1 egg, whisked

¼ cup tahini

50g 70-85% chocolate

125g Medjool dates

3 tblsp dark coffee

1 tsp baking powder

Method

  1. Pre-heat the oven to 180C.

  2. Take the stones out of the dates and soak in the coffee. Blend until you have a smooth paste.

  3. Mix the ground almonds, egg, tahini and baking powder together in a bowl.

  4. Stir in the date and coffee paste.

  5. Chop the dark chocolate and mix into the cookie dough.

  6. Roll into 12 small bowls (about 1 tblsp each), press down slightly to make a cookie shape and pop in the oven for 12mins. Cool and enjoy!
