Beans
Beans are a cheap and healthy food that have been used throughout the world for thousands of years. They come in hundreds of different varieties so there’s something to appeal to everyone’s palate, and they are so convenient as they can be dried and stored for years. Soaking beans will, activate their enzymes, proteins, minerals and vitamins. Most beans are full of fibre and complex carbohydrates, have little fat, no cholesterol and their high protein content means they’re a must for vegetarians. They also contain B vitamins, iron, calcium, copper, zinc, phosphorus, potassium and magnesium. The complex carbohydrates take longer to break down so you feel fuller for longer however one side effect of this is the production of gas by bacteria in the gut that break it down. To reduce embarrassing smells try building up your tolerance to beans slowly or when you are soaking the beans change the water regularly. Beans (especially soy) are a phytoestrogen rich food which may help to reduce the risks of prostate and breast cancer and can reduce PMS and menopausal symtoms. Beans can be eaten raw, sprouted or cooked, try adding them to salads, casseroles or soups. See the recipe page for some ideas.
