Salmon tahini
serves 4
4 salmon steaks – skinned and boned
2 tbsp tahini paste
2 tbsp water
1 lime – rind and juice
1 teaspoon grated fresh ginger
1 clove garlic, peeled and crushed (optional)
2 tbsp soy sauce
2 tbsp shaosing rice wine
1 tbsp maple syrup
freshly ground black pepper
to garnish
watercress or fresh parsley
lime wedges
Method
- heat the oven to 180°C/gas mark 4
- arrange the salmon pieces in one layer in a shallow dish
- combine the other ingredients together and pour over the salmon
- bake for 20 minutes - or until the flesh feels firm and flakes when pressed gently
