Oat muesli with fruit

This is rather good if made the night before and left to soak in the fridge - the next day a variety of fresh fruits of your choice can be added just before serving - these amounts can easily be doubled up to make more

Serves 4

6 handfuls porridge oats
8 unsulphured apricots - chopped
4 dried figs - chopped
handful each of mixed seeds - sunflower, pumpkin, sesame, linseed
handful sultanas
handful dates - chopped
fresh milk/soya milk/natural yoghurt - to cover

to serve
handful fresh berries - blueberries/raspberries/strawberries/redcurrants
handful hazelnuts
handful almonds
apples and pears - chopped or grated
maple syrup or manuka honey to sweeten (optional)

Method

  • combine all the dry ingredients in a large bowl
  • cover with the milk
  • stir and place covered in the fridge for several hours
  • before serving - stir and add more milk if needed
  • add your choice of berries
  • garnish with mint if expecting guests!!
