Thai fish in a parcel
This is a great fast food alternative - it takes minutes to prepare and is super-healthy too. The ginger is a great anti-inflammatory, coconut milk is good for the digestion and the white fish is a rich source of minerals.
Serves 4
4 portions cod/haddock/salmon - skinless and pin boned
1 fresh chilli - finely sliced
2 inches fresh ginger - grated
1 clove garlic - grated
1 tin coconut milk
2 stalks lemongrass - very finely chopped
2 limes - zest and juice
4 tablespoons soy sauce
bunch fresh coriander - chopped
freshly ground black pepper
sesame oil (optional) - only a few drops
4 large sheets tin foil - folded in half and made into 4 bags
Method
- preheat the oven to 220C/gas7 - preheat a solid baking sheet
- place a portion of fish into each of the bags
- add the remainder of the ingredients equally into each of the bags
- seal the open end tightly to form a parcel
- place onto the hot baking tray and cook for 10 - 15 minutes depending on the portion size
- carefully remove from the oven and slit open the parcel
- garnish with freshly chopped coriander
- serve with tilda brown basmati rice
