This is a great fast food alternative - it takes minutes to prepare and is super-healthy too. The ginger is a great anti-inflammatory, coconut milk is good for the digestion and the white fish is a rich source of minerals.
Ingredients Serves 4
- 4 portions cod/haddock/salmon - skinless and pin boned
- 1 fresh chilli - finely sliced
- 2 inches fresh ginger - grated
- 1 clove garlic - grated
- 1 tin coconut milk
- 2 stalks lemongrass - very finely chopped
- 2 limes - zest and juice
- 4 tablespoons soy sauce
- bunch fresh coriander - chopped
- freshly ground black pepper
- sesame oil (optional) - only a few drops
- 4 large sheets tin foil - folded in half and made into 4 bags
