Thai fish in a parcel

This is a great fast food alternative - it takes minutes to prepare and is super-healthy too. The ginger is a great anti-inflammatory, coconut milk is good for the digestion and the white fish is a rich source of minerals.

Ingredients
Serves 4
  • 4 portions cod/haddock/salmon - skinless and pin boned
  • 1 fresh chilli - finely sliced
  • 2 inches fresh ginger - grated
  • 1 clove garlic - grated
  • 1 tin coconut milk
  • 2 stalks lemongrass - very finely chopped
  • 2 limes - zest and juice
  • 4 tablespoons soy sauce
  • bunch fresh coriander - chopped
  • freshly ground black pepper
  • sesame oil (optional) - only a few drops

  • 4 large sheets tin foil - folded in half and made into 4 bags
Method
  • preheat the oven to 220C/gas7 - preheat a solid baking sheet
  • place a portion of fish into each of the bags
  • add the remainder of the ingredients equally into each of the bags
  • seal the open end tightly to form a parcel
  • place onto the hot baking tray and cook for 10 - 15 minutes depending on the portion size
  • carefully remove from the oven and slit open the parcel
  • garnish with freshly chopped coriander
  • serve with tilda brown basmati rice
