Salmon Tahini

serves 4
Ingredients
  • 4 salmon steaks – skinned and boned
  • 2 tbsp tahini paste
  • 2 tbsp water
  • 1 lime – rind and juice
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, peeled and crushed (optional)
  • 2 tbsp soy sauce
  • 2 tbsp shaosing rice wine
  • 1 tbsp maple syrup
  • freshly ground black pepper
to garnish
  • watercress or fresh parsley
  • lime wedges
Method
  • heat the oven to 180°C/gas mark 4
  • arrange the salmon pieces in one layer in a shallow dish
  • combine the other ingredients together and pour over the salmon
  • bake for 20 minutes - or until the flesh feels firm and flakes when pressed gently
