· preheat the oven to 180C/350F/gas 4
· put the plums, red wine, maple syrup and ginger into a saucepan
· poach gently for about 10 minutes
· pour the mix into an ovenproof dish
· combine the oats, butter, coconut, cinnamon and maple syrup together
· sprinkle over the plums - scatter the almonds over the top
· bake for about 25 – 35 minutes until golden brown
